Ingredients
4 salmon fillets, or 1 large side of salmon
1 bunch asparagus, trimmed
3 tbsp butter, melted
3 cloves garlic, minced
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Italian seasoning
1 tbsp fresh parsley, chopped
Lemon slices, for topping
Instructions
Preheat oven
Set oven to 400°F (200°C).
Prepare foil
Lay a large sheet of foil on a baking sheet or in a baking dish. Lightly grease with olive oil.
Make the lemon garlic butter sauce
In a small bowl, mix:
melted butter
garlic
lemon juice
lemon zest
parsley
salt
pepper
paprika
Italian seasoning
Assemble
Place salmon in the center of the foil and arrange asparagus along the sides. Pour the lemon garlic butter sauce over the salmon and asparagus. Top with lemon slices.
Seal the foil
Fold the foil over and seal the edges well to keep the juices inside.
Bake
Bake for 15–20 minutes, depending on thickness, until the salmon flakes easily with a fork and the asparagus is tender.
Optional broil
Open the foil and broil for 2–3 minutes for a more golden top.
Serve
Spoon extra sauce from the foil over the salmon before serving.
Tips
Thicker salmon fillets may need a few extra minutes.
Add a sprinkle of parmesan for extra richness.
Great served with rice, potatoes, or crusty bread.
