Beetroot, Avocado, and Orange Salad

Ingredients
2 medium beetroot, cooked and sliced
1 ripe avocado, diced
1 orange, peeled and segmented
2 tablespoons chopped fresh parsley or cilantro
1 tablespoon olive oil
1 tablespoon lemon or orange juice
Salt, to taste
Black pepper, to taste
Optional
Pinch of chili flakes
A few drops of balsamic vinegar
Instructions
Cook the beetroot until tender, let it cool, then peel and slice.
Peel the orange and separate it into segments.
Cut the avocado into bite-sized pieces.
Place the beetroot, avocado, and orange in a bowl.
Add chopped parsley or cilantro.
Drizzle with olive oil and lemon or orange juice.
Season with salt, black pepper, and chili flakes if using.
Toss gently and serve fresh.
Tip For the best flavor, chill the beetroot first and add the avocado just before serving.
