Zero-Carb Strawberry Mousse

Ingredients

  • 1 cup fresh strawberries (or frozen, thawed)
  • 1 cup heavy whipping cream
  • 2–3 tbsp powdered erythritol (or monk fruit sweetener)
  • 1 tsp vanilla extract
  • Optional: 2 tbsp cream cheese (for extra thickness)
  • Optional: a few drops strawberry extract (boost flavor without carbs)

👩‍🍳 Instructions

  1. Blend strawberries
    Blend until smooth. For fewer carbs, you can strain out some pulp/seeds.
  2. Whip the cream
    In a separate bowl, whip heavy cream until soft peaks form.
  3. Mix base
    Add sweetener, vanilla, and optional cream cheese to the strawberry puree. Mix well.
  4. Fold together
    Gently fold whipped cream into the strawberry mixture until fluffy.
  5. Chill
    Refrigerate for 1–2 hours to set.

🥄 Tips for “Lower Carb”

  • Use fewer strawberries and more cream
  • Add strawberry extract to boost flavor without extra carbs
  • Substitute part of strawberries with unsweetened gelatin for a firmer mousse

  • Strawberries ≠ zero carb
  • This recipe is low-carb (~3–5g net carbs per serving), not truly zero
