Ingredients
8 oz (225g) rotini or fusilli pasta
1 medium zucchini, sliced into thin rounds
1½ cups cherry tomatoes, halved
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
1 teaspoon Italian seasoning or dried oregano
¼ cup fresh basil or parsley, chopped
Salt, to taste
Black pepper, to taste
¼ cup grated Parmesan cheese (optional)
Red pepper flakes, optional for extra heat
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Sauté the Zucchini
Heat the olive oil in a large skillet over medium heat. Add the sliced zucchini and cook for 4–5 minutes, stirring occasionally, until lightly golden and tender.
Step 3: Add Garlic and Tomatoes
Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the cherry tomatoes and Italian seasoning. Cook for 4–5 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.
Step 4: Combine Everything
Add the cooked pasta to the skillet and toss well to combine. If needed, add a few tablespoons of the reserved pasta water to create a light sauce. Season with salt and black pepper to taste.
Step 5: Finish and Serve
Remove from heat and stir in the fresh basil or parsley. Sprinkle with Parmesan cheese and red pepper flakes if desired. Serve immediately.
Tips
Add grilled chicken, shrimp, or salmon for extra protein.
For a richer flavor, stir in a tablespoon of butter before serving.
Use whole wheat pasta for a healthier version.
Fresh basil provides the best flavor, but parsley works wonderfully too.
