Ingredients
6 bone-in, skin-on chicken thighs
1 large sweet onion, sliced into rings
1 cup Russian dressing
1 tablespoon olive oil or cooking spray, for the baking dish
Instructions
Preheat the oven to 350°F (175°C).
Prepare the baking dish: Lightly grease a 9×13-inch baking dish.
Add the onions: Spread the sliced sweet onion rings evenly across the bottom of the dish.
Add the chicken: Pat the chicken thighs dry and arrange them skin-side up over the onions.
Add the dressing: Pour the Russian dressing evenly over the chicken, making sure each piece is well coated.
Cover and bake: Cover the dish tightly with aluminum foil and bake for 45 minutes.
Uncover: Carefully remove the foil. Spoon some of the sauce and juices from the bottom of the dish over the chicken.
Finish baking: Return the dish to the oven uncovered and bake for another 25–35 minutes, until the chicken is browned and the onions are tender.
Check the temperature: The thickest part of the chicken should reach at least 165°F (74°C).
Rest: Remove from the oven and let the chicken rest for 5 minutes.
Serve: Spoon the caramelized onions and delicious pan sauce over the chicken and serve hot.
