Mediterranean Ground Beef Skillet

Time: 25–30 minutes
Ingredients
1 lb ground beef
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
1/2 red onion, sliced or chopped
2 to 3 garlic cloves, minced
1 to 2 tbsp olive oil
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp ground cumin
Salt, to taste
Black pepper, to taste
1/4 cup beef broth or water
1/3 to 1/2 cup crumbled feta cheese
2 tbsp chopped fresh parsley
1 tbsp lemon juice
Optional add-ins
Sliced olives
Red pepper flakes
Bell pepper
Spinach
Instructions
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add the ground beef and cook until browned, breaking it up as it cooks, about 5 to 7 minutes.
Season with salt, pepper, oregano, paprika, and cumin. Stir in the garlic and cook for 30 seconds.
If there is excess grease, drain some off.
Add the red onion and zucchini. Cook for 4 to 5 minutes until slightly softened.
Add the cherry tomatoes and a splash of beef broth or water. Cook another 3 to 4 minutes, just until the tomatoes begin to soften but still hold shape.
Turn off the heat. Stir in lemon juice.
Sprinkle feta and fresh parsley over the top before serving.
