Ingredients
1 can chickpeas, drained and rinsed
1 cup sweet corn
1 red bell pepper, diced
1/4 red onion, finely chopped
1/4 cup fresh parsley, chopped
2 green onions, sliced
2 to 3 tbsp lemon juice
2 tbsp olive oil
Salt, to taste
Black pepper, to taste
Optional
Chopped cucumber
Jalapeño or chili flakes
Avocado
Instructions
In a bowl, combine chickpeas, corn, red bell pepper, red onion, parsley, and green onions.
In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
Pour the dressing over the salad and toss well.
Chill for 15 to 30 minutes before serving for best flavor.
