1 small yellow onion, sliced
2 cloves garlic, minced
100g feta cheese, crumbled
2 tablespoons olive oil
Salt and black pepper, to taste
1 teaspoon dried oregano
Fresh parsley, chopped (for garnish)
👨‍🍳 Instructions

  1. Heat the Pan
In a large skillet, heat olive oil over medium-high heat until hot.

Stir in sliced red and yellow onions. Cook for 3–4 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
  4. Add Vegetables
Add zucchini slices and cook for 4–5 minutes, stirring occasionally, until slightly tender but not mushy.
  5. Add Tomatoes
Stir in cherry tomatoes and cook for 2–3 minutes, just until they soften and release their juices.
  6. Finish with Feta
Turn off the heat and sprinkle crumbled feta cheese over the skillet. Let it slightly melt into the dish.
