Ingredients:
1 lb (450g) ground beef
1 packet taco seasoning (or homemade keto-friendly seasoning)
1/2 cup (120ml) tomato sauce
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup sour cream
1/4 cup chopped green onions
1/2 cup chopped black olives
1/2 cup chopped tomatoes
1/4 cup fresh cilantro, chopped
1/4 cup jalapeño slices (optional for spice)
Salt and pepper to taste
1 tbsp olive oil (for cooking the beef)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Cook the Ground Beef:
In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up with a spoon as it cooks. Season with salt and pepper, and cook until browned. Drain any excess fat. Add the taco seasoning and tomato sauce, then stir to combine. Let it simmer for 2-3 minutes, allowing the flavors to meld together.
Assemble the Casserole:
Grease a 9×9-inch baking dish or similar-sized casserole dish. Spread the cooked ground beef mixture evenly in the bottom of the dish. Top with a layer of shredded mozzarella and cheddar cheese.
Bake:
Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
Add Toppings:
Once baked, remove the casserole from the oven. Spread sour cream on top, then sprinkle with chopped green onions, black olives, chopped tomatoes, jalapeños (if using), and fresh cilantro.
Serve:
Slice into squares and serve hot. Enjoy your keto-friendly taco casserole with a side of avocado or a fresh salad for extra flavor.
Tips:
Taco Seasoning: To keep it truly keto, use a homemade taco seasoning without sugar or preservatives.
Variations: You can add extra veggies like bell peppers or zucchini to the beef mixture for added nutrition.
Make Ahead: This casserole can be made ahead of time and stored in the fridge for up to 3 days. Reheat before serving.
Serving Suggestion:
Serve this casserole with a side of fresh guacamole, sour cream, or a light avocado salad to complete the meal.
