Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Ingredients
4 boneless, skinless chicken breasts
1/2 cup roasted red peppers, sliced
1 cup fresh spinach, chopped
1 cup mozzarella cheese, sliced or shredded
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp paprika
Salt and black pepper to taste
Toothpicks or kitchen twine
Instructions
Preheat oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
Season both sides of the chicken with garlic powder, Italian seasoning, paprika, salt, and black pepper.
Stuff each chicken breast with spinach, roasted red peppers, and mozzarella cheese. Secure with toothpicks if needed.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown.
Transfer the skillet to the oven and bake for 18–22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Let rest for 5 minutes before serving.

Tips
