Cajun White Chicken Chili

A hearty and flavorful Cajun-inspired white chicken chili packed with tender chicken, smoky andouille sausage, creamy white beans, and bold spices. Perfect for chilly evenings and family dinners.
Ingredients
Proteins
1 lb andouille sausage, sliced
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
Vegetables
1 medium onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
Pantry
2 (15 oz) cans great northern beans, drained and rinsed
4 cups chicken broth
1 (4 oz) can diced green chiles
Seasonings
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon salt (adjust to taste)
Creamy Finish
4 oz cream cheese, softened
½ cup heavy cream
Garnish
Chopped green onions
Fresh parsley
Shredded cheddar cheese (optional)
Instructions
Heat a large Dutch oven or soup pot over medium-high heat.
Add the sliced andouille sausage and cook for 4–5 minutes until browned. Remove and set aside.
In the same pot, add the chicken pieces and cook until lightly browned, about 5 minutes.
Add the onion, bell pepper, celery, and garlic. Cook for 4–5 minutes until softened.
Stir in the Cajun seasoning, smoked paprika, thyme, salt, and pepper. Cook for 1 minute until fragrant.
Return the sausage to the pot. Add the white beans, green chiles, and chicken broth. Stir well.
Bring to a gentle boil, then reduce heat and simmer uncovered for 25–30 minutes.
Stir in the softened cream cheese until completely melted and incorporated.
Add the heavy cream and simmer for another 5 minutes until the chili becomes rich and creamy.
Taste and adjust seasonings as needed.
Serve hot, garnished with green onions, parsley, and shredded cheddar cheese if desired.
Recipe Notes
For extra heat, add cayenne pepper or diced jalapeños.
Great Northern beans can be replaced with cannellini beans.
Leftovers store well in the refrigerator for up to 4 days.
Serve with cornbread, crusty bread, or over rice.
