Cheesy Baked Chicken with Zucchini & Tomato

A simple, wholesome baked chicken dish loaded with tender zucchini, juicy cherry tomatoes, and melted mozzarella cheese. Perfect for a comforting family dinner with minimal prep.
Ingredients
2 boneless, skinless chicken breasts
2 medium zucchinis, sliced into rounds
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
Fresh parsley or basil, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
Arrange the sliced zucchini evenly in the bottom of the baking dish. Scatter the cherry tomatoes over the zucchini.
In a small bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and black pepper.
Place the chicken breasts on top of the vegetables and brush them generously with the seasoned olive oil mixture.
Bake for 20–25 minutes, or until the chicken is nearly cooked through.
Remove the dish from the oven and sprinkle the shredded mozzarella evenly over the chicken and vegetables.
Return to the oven and bake for an additional 10–15 minutes, or until the cheese is melted and golden and the chicken reaches an internal temperature of 165°F (74°C).
Let the dish rest for 5 minutes before serving.
Garnish with fresh parsley or basil and serve warm.
Recipe Notes
Add a sprinkle of Parmesan cheese for extra flavor.
For a low-carb meal, serve as is.
Pair with rice, pasta, or crusty bread for a heartier dinner.
